White Bean & Chicken Soup

Ever since I got married and realized how much 1 man can eat, I try to make dinner recipes that will last us a few days! I love cooking, but making a meal every night is not my favorite! So I have found that soup is one of my go-to recipes to incorporate lots of veggies, protein & fiber while also feeding us for several days. Even in the warm summer months, I can house a bowl of soup. Just keep the temperature in your house cooler :)

Serves 6-8 people

Ingredients

Produce

1 onion diced

1 red bell pepper diced

1 green bell pepper diced

2 cups of chopped baby spinach 

1 cup of diced carrots

1 cup of diced celery

Packaged

1 (12oz) can of white beans (cannelleni or great northern) drained and rinsed

1 (28oz) can of fire roasted diced tomatoes

1 (12oz) can of corn, drained 

1 (32oz) container of chicken broth

1 (4oz) can of diced green chiles 

Protein

1 rotisserie chicken chopped up or 3 cups of chopped chicken 

Seasonings

1 tbsp of each: cumin, chili powder, garlic powder

2 tsp of salt, pepper 

Steps

Heat 1tbsp of oil in large soup pot over medium heat, add in onion & bell peppers. Sauté for 5 minutes. Add in remaining ingredients. Bring to boil, reduce to simmer and cook for 30 minutes or until carrots are soft. 

Serve alone or add toppings like avocado, cheese or crackers!
